Beetroot Poriyal recipe
Ingredients:
➤2 cups grated beetroot
➤1 tablespoon oil
➤1/2 teaspoon mustard seeds
➤1/2 teaspoon urad dal (split black gram)
➤1/2 teaspoon cumin seeds
➤1-2 green chilies, finely chopped
➤A pinch of asafoetida (hing)
➤1 sprig curry leaves
➤2 tablespoons grated coconut (optional)
➤Salt to taste
Instructions:
1. Prepare the Beetroot:
a. Peel and grate the beetroot. Set aside.
2. Cook the Beetroot:
a. Heat oil in a pan over medium heat.
b. Add mustard seeds and let them splutter.
c. Add urad dal and cumin seeds. Saute until urad dal turns golden brown.
d. Add chopped green chilies, asafoetida, and curry leaves. Saute for a minute.
3. Add Beetroot:
a. Add the grated beetroot to the pan and mix well.
b. Cook on medium heat, stirring occasionally. Cover the pan to help the beetroot cook faster.
4. Stir-fry:
a. Continue to cook until the beetroot is tender but still retains a slight crunch. This may take about 8-10 minutes.
b. If you prefer a softer texture, you can cook it a bit longer.
5. Add Coconut (Optional):
a. If using grated coconut, add it to the beetroot poriyal and mix well.
6. Season with Salt:
a. Add salt to taste and mix again. Adjust the seasoning if needed.
7. Serve:
a. Beetroot Poriyal is ready to be served. It makes a perfect side dish for rice along with sambar, rasam, or any South Indian curry.
