Ingredients:


For the Cabbage Fritters:

➤2 cups of cabbage, finely shredded

➤1/2 cup of all-purpose flour (maida)

➤1/4 cup of cornstarch

➤1/2 teaspoon of ginger-garlic paste

➤1/2 teaspoon of red chili powder

➤Salt to taste

➤Water, as needed

➤Oil for deep frying


For the Manchurian Sauce:

➤1 tablespoon of oil

➤1 small onion, finely chopped

➤1/2 bell pepper (capsicum), finely chopped

➤2-3 cloves of garlic, minced

➤1/2-inch piece of ginger, minced

➤1-2 green chilies, finely chopped (adjust to your spice preference)

➤1 tablespoon of soy sauce

➤1 tablespoon of tomato ketchup

➤1/2 teaspoon of red chili sauce (adjust to your spice preference)

➤1/2 teaspoon of vinegar

➤1/2 teaspoon of sugar

➤1/2 cup of water

➤1 tablespoon of cornstarch mixed with 2 tablespoons of water to make a slurry

➤Salt and pepper to taste

➤Chopped spring onions for garnish




Instructions:


For the Cabbage Fritters:

1. In a large mixing bowl, combine the finely shredded cabbage, all-purpose flour, cornstarch, ginger-        garlic paste, red chili powder, and salt.


2. Gradually add water and mix the ingredients to make a thick batter. The batter should be thick                enough to coat the cabbage, but not too runny.


3. Heat oil in a deep frying pan or wok over medium-high heat.


4. Take small portions of the cabbage batter and drop them into the hot oil. Fry the fritters until they are      golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.




For the Manchurian Sauce:

1. Heat 1 tablespoon of oil in a separate pan or wok over medium-high heat.


2. Add minced garlic, ginger, and green chilies. Sauté for a minute until they become fragrant.


3. Add the finely chopped onion and bell pepper. Sauté for a few minutes until they become slightly            tender but still retain their crunch.


4. Add soy sauce, tomato ketchup, red chili sauce, vinegar, sugar, salt, and pepper. Mix well and cook        for a couple of minutes.


5. Add 1/2 cup of water and bring it to a simmer.


6. Stir in the cornstarch slurry to thicken the sauce. Cook until the sauce thickens to your desired                consistency.




Assembling:

1. Just before serving, add the fried cabbage fritters to the Manchurian sauce.


2. Toss the fritters in the sauce to coat them evenly.


3. Garnish with chopped spring onions.


4. Serve Cabbage Manchurian hot as an appetizer or as a side dish with rice or noodles.
