Ingredients:


For the Carrot Cake:

➤2 cups all-purpose flour

➤1 1/2 cups granulated sugar

➤1 1/2 tsp baking powder

➤1 tsp baking soda

➤1/2 tsp salt

➤1 1/2 tsp ground cinnamon

➤1/2 tsp ground nutmeg

➤1/2 tsp ground ginger

➤1/2 cup vegetable oil

➤3 large eggs

➤2 tsp pure vanilla extract

➤2 cups grated carrots (about 3-4 medium carrots)

➤1/2 cup crushed pineapple, drained

➤1/2 cup chopped nuts (walnuts or pecans, optional)


For the Cream Cheese Frosting:

➤8 oz cream cheese, softened

➤1/2 cup unsalted butter, softened

➤4 cups powdered sugar

➤1 tsp pure vanilla extract




Instructions:


For the Carrot Cake:

1. Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans or one 9x13-inch      rectangular pan.


2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon,                   nutmeg,  and ginger.


3. In another bowl, mix the vegetable oil, eggs, and vanilla extract until well combined.


4. Pour the wet ingredients into the dry ingredients and stir until just combined.


5. Fold in the grated carrots, crushed pineapple, and chopped nuts (if using).


6. Divide the batter evenly between the prepared cake pans.


7. Bake for 25-30 minutes if using two round pans, or 30-35 minutes for a rectangular pan, or until a           toothpick inserted into the center comes out clean.


8. Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool          completely.



For the Cream Cheese Frosting:

1. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.


2. Add the powdered sugar and vanilla extract, and continue to beat until the frosting is smooth and             well   combined.



Assembly:

1. Once the cakes are completely cooled, spread a layer of cream cheese frosting on top of one of the          cakes.


2. Place the second cake on top and frost the top and sides of the entire cake.


3. You can garnish the cake with additional chopped nuts or shredded carrots, if desired.


4. Slice and serve your delicious homemade carrot cake!
