Ingredients:


➤2 cups of grated carrots

➤1/2 cup of grated coconut (fresh or frozen)

➤2-3 green chilies (adjust to your spice preference)

➤1 small onion, chopped

➤2-3 cloves of garlic (optional)

➤1/2-inch piece of ginger

➤A small handful of coriander leaves (cilantro)

➤1 tablespoon of oil

➤1/2 teaspoon of mustard seeds

➤1/2 teaspoon of urad dal (split black gram)

➤A pinch of hing (asafoetida)

➤Salt to taste

➤Water, as needed



Instructions:


1. Heat a tablespoon of oil in a pan over medium heat.


2. Add mustard seeds and urad dal. Let them splutter and turn golden brown.


3. Add chopped onions, green chilies, and garlic (if using). Sauté until the onions turn translucent.


4. Add the grated carrots and ginger. Cook for about 5-7 minutes until the carrots become tender. You can cover the pan to speed up the cooking process.


5. Once the carrots are cooked, add the grated coconut and sauté for a few more minutes. This helps to blend the flavors.


6. Turn off the heat and let the mixture cool down to room temperature.


7. Transfer the cooled mixture to a blender or food processor. Add a pinch of hing (asafoetida), salt, and the coriander leaves.


8. Blend the mixture into a smooth chutney, adding a little water as needed to achieve your desired consistency. You can make it thick or thin, depending on your preference.


9. Taste and adjust salt and spice levels if necessary.


10. Transfer the carrot chutney to a serving bowl.


11. In a separate pan, you can prepare a tempering/tadka for added flavor. Heat a little oil, add mustard seeds, urad dal, and a few curry leaves. Once the mustard seeds splutter, pour this tempering over the carrot chutney.


12. Mix well, and your carrot chutney is ready to be served.


You can enjoy carrot chutney with dosa, idli, rice, or even as a dip for snacks. It's a versatile and healthy accompaniment that adds a unique twist to your meals.
