Ingredients:


➤2 cups of grated carrots

➤1/2 cup of basmati rice

➤4 cups of milk

➤1 cup of sugar (adjust to your sweetness preference)

➤1/4 cup of ghee (clarified butter)

➤1/4 cup of broken cashew nuts

➤1/4 cup of raisins

➤1/2 teaspoon cardamom powder

➤A pinch of saffron strands (optional)

➤A pinch of salt


Instructions:


1. Wash and soak rice:

➤Wash the basmati rice and soak it in water for 15-20 minutes. After soaking, drain the water and set       the rice aside.


2. Cook the carrots and rice:

➤In a large, heavy-bottomed pan, add the grated carrots and soaked, drained rice.

➤Add 2 cups of milk and bring it to a boil.

➤Reduce the heat to low and simmer, stirring occasionally until the carrots and rice are cooked and          the mixture thickens. This may take around 20-25 minutes.


3. Add sugar and continue to cook:

➤Add the sugar to the carrot and rice mixture. Continue to cook on low heat, stirring frequently, until        the sugar is completely dissolved, and the mixture thickens further.


4. Add saffron (optional) and cardamom:

➤If using saffron, dissolve the saffron strands in a little warm milk and add it to the mixture.

➤Add the cardamom powder and mix well. Allow the flavors to meld for a few minutes.


5. Prepare the tempering:

➤In a separate small pan, heat the ghee over low heat.

➤Add the cashew nuts and raisins. Sauté them until the nuts turn golden and the raisins plump up. Be        careful not to burn them.


6. Combine the tempering with the payasam:

➤Pour the ghee, cashew nuts, and raisins into the carrot and rice mixture. Mix well.


7. Simmer and adjust consistency:

➤Add the remaining 2 cups of milk to the payasam and simmer for an additional 5-10 minutes, stirring      occasionally, to achieve your desired consistency.


8. Add a pinch of salt:

➤A pinch of salt enhances the sweetness in desserts. Add it to the payasam and mix well.


9. Serve:

➤Carrot Payasam can be served hot or chilled. It's delicious either way. You can garnish it with                  additional nuts or saffron strands if desired.
