Ingredients:


➤1 cup grated carrots (about 2 medium-sized carrots)

➤1 1/2 cups thick yogurt (curd)

➤1/2 teaspoon cumin powder

➤1/2 teaspoon black salt (kala namak) or regular salt, to taste

➤1/4 teaspoon black pepper

➤1/4 teaspoon roasted cumin seeds (for garnish)

➤1-2 green chilies, finely chopped (adjust to your spice preference)

➤Fresh coriander leaves for garnish (optional)



Instructions:


1. Prepare the carrots:

➤Wash, peel, and grate the carrots finely. Set them aside.


2. Whisk the yogurt:

➤In a mixing bowl, whisk the thick yogurt until it becomes smooth and creamy.


3. Add grated carrots:

➤Add the grated carrots to the yogurt and mix well.


4. Season the raita:

➤Add cumin powder, black salt or regular salt, and black pepper to the yogurt-carrot mixture. Stir to        combine all the ingredients thoroughly.


5. Add green chilies:

➤If you like a little heat, you can add finely chopped green chilies to the raita. Adjust the quantity              based on your spice preference.


6. Garnish:

➤Garnish the carrot raita with roasted cumin seeds (lightly roast cumin seeds in a dry pan until                   fragrant) and fresh coriander leaves if desired.


7. Chill and serve:

➤Refrigerate the carrot raita for at least 30 minutes before serving to allow the flavors to meld. You          can also serve it immediately, but chilling enhances the taste.
