Ingredients:


➤2 cups of carrots (gajar), peeled and diced

➤1 cup of green peas (matar), fresh or frozen

➤1 onion, finely chopped

➤2-3 cloves of garlic, minced

➤1-inch piece of ginger, grated

➤2-3 green chilies, slit lengthwise (adjust to your spice preference)

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon turmeric powder

➤1 teaspoon cumin powder

➤1 teaspoon coriander powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤1/2 teaspoon garam masala

➤Salt, to taste

➤2-3 tablespoons cooking oil or ghee

➤Fresh cilantro leaves for garnish (optional)


Instructions:


1. Heat oil or ghee:

➤Heat cooking oil or ghee in a pan or skillet over medium heat.


2. Temper:

➤Add cumin seeds and let them splutter.


3. Sauté the aromatics:

➤Add minced garlic, grated ginger, and green chilies. Sauté for a minute or until they release their            aroma.


4. Add onions:

➤Add the finely chopped onions and cook until they become translucent.


5. Add carrots and peas:

➤Add the diced carrots and green peas to the pan. Stir to coat the vegetables with the tempering.


6. Season and spice it up:

➤Season with salt and add turmeric powder, cumin powder, coriander powder, red chili powder, and          garam masala. Mix well and cook for a few minutes to blend the spices.


7. Cook on low heat:

➤Reduce the heat to low, cover the pan, and let the vegetables cook for about 15-20 minutes or until          they are tender. Stir occasionally to prevent sticking and burning. If needed, you can add a little               water  to help with the cooking.


8. Garnish and serve:

➤Once the vegetables are cooked and the flavors have melded, garnish with fresh cilantro leaves if             desired.
