Ingredients:


➤1 kg fresh and tender carrots

➤500 grams granulated sugar

➤1 lemon, juiced

➤1/2 teaspoon cardamom powder

➤1/4 teaspoon saffron strands (optional)

➤A pinch of salt

➤Water



Instructions:


1. Wash and peel the carrots:

➤Wash the carrots thoroughly and peel them. Cut the carrots into thin rounds or julienne strips.


2. Cook the carrots:

➤In a large, heavy-bottomed pan, add the carrot slices and enough water to cover them.

➤Bring the water to a boil and cook the carrots until they are tender. This may take about 10-15                minutes.


3. Drain the water:

➤Drain the boiled carrots and set them aside.


4. Prepare sugar syrup:

➤In the same pan, add 500 grams of granulated sugar and enough water to cover the sugar. Heat the         mixture until the sugar dissolves completely.


5. Cook the carrots in sugar syrup:

➤Add the drained carrot slices to the sugar syrup and cook them on low heat. Stir occasionally.


6. Add lemon juice and cardamom:

➤When the carrot slices become translucent and the sugar syrup thickens (which may take around 30-       40 minutes), add the lemon juice, cardamom powder, and saffron strands (if using). Stir well.


7. Cook until the syrup thickens:

➤Continue cooking until the sugar syrup thickens and becomes sticky. The carrot slices will become         shiny and coated with the syrup.


8. Check the consistency:

➤To check the consistency, place a drop of the syrup on a plate. It should solidify and not flow when        cooled.


9. Cool and store:

➤Once the murabba is ready, remove it from the heat and let it cool to room temperature.


10. Transfer to jars:

➤Once the murabba has cooled, transfer it to clean, sterilized glass jars with airtight lids.


11. Serve:

➤Gajar Murabba can be stored at room temperature for several months. Enjoy it as a sweet and tangy       condiment or a dessert. It pairs well with parathas, puris, or can be eaten on its own.
