Ingredients:
For the Dosa Batter:
➤2 cups of dosa rice (or regular rice)
➤1/2 cup of urad dal (black gram dal)
➤A pinch of fenugreek seeds (methi seeds)
➤Salt to taste
For the Filling:
➤2 cups of mixed vegetables (cabbage, bell peppers, carrots, beans, etc.), finely chopped
➤1 onion, finely chopped
➤1-2 green chilies, finely chopped (adjust to your spice preference)
➤1/2 teaspoon ginger-garlic paste
➤1/2 teaspoon soy sauce
➤1/2 teaspoon red chili sauce
➤1/2 teaspoon tomato ketchup
➤Salt to taste
➤2-3 tablespoons of oil
For the Jini Dosa Masala:
➤1/2 cup grated paneer (cottage cheese)
➤1/2 cup grated processed cheese
➤2-3 tablespoons of butter
➤1/2 teaspoon chaat masala
➤1/2 teaspoon black pepper powder
Instructions:
1. Prepare the Dosa Batter:
a. Wash and soak dosa rice and urad dal separately for at least 4-5 hours or overnight.
b. Grind them separately into a smooth paste, and then combine both the rice and urad dal pastes.
c. Add a pinch of fenugreek seeds and salt. Mix well. The dosa batter is ready. Let it ferment for about 8-10 hours or until it's slightly sour.
2. Prepare the Dosa:
a. Heat a non-stick dosa pan or griddle over medium heat.
b. Pour a ladleful of dosa batter in the center and spread it in a circular motion to make a thin dosa.
c. Drizzle a little oil around the dosa and let it cook until it becomes crispy and golden brown.
d. Fold the dosa into a roll and set it aside.
3. Prepare the Filling:
a. Heat oil in a pan over medium heat.
b. Add the chopped onions and green chilies. Sauté until the onions turn translucent.
c. Add ginger-garlic paste and sauté for a minute.
d. Add the finely chopped vegetables and sauté for a few minutes until they become slightly tender.
e. Add soy sauce, red chili sauce, tomato ketchup, and salt. Mix well and cook for a couple more minutes.
4. Prepare the Jini Dosa Masala:
a. Take a dosa and place it on a clean surface.
b. Spread a generous amount of the prepared vegetable filling on the dosa.
c. Sprinkle grated paneer and processed cheese.
d. Sprinkle chaat masala and black pepper powder.
e. Place small pieces of butter on top.
5. Roll up the dosa tightly, making sure the filling is enclosed.
6. Heat a pan or griddle and lightly toast the Jini Dosa rolls on all sides until the cheese melts and the dosa is crispy.
7. Serve the Jini Dosa hot with tomato ketchup or mint chutney.
