Ingredients:


For the vegetable filling:

➤2 medium potatoes, boiled, peeled, and mashed

➤1/2 cup green peas, boiled

➤1/2 cup carrots, finely chopped and boiled

➤1/2 cup beans, finely chopped and boiled

➤1/2 cup corn kernels (optional), boiled

➤1 small onion, finely chopped

➤2-3 green chilies, finely chopped (adjust to your spice preference)

➤1/2-inch piece of ginger, grated

➤2-3 cloves of garlic, minced

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon garam masala

➤1/2 teaspoon red chili powder (adjust to taste)

➤1/2 teaspoon turmeric powder

➤Salt, to taste

➤2 tablespoons cooking oil

➤Fresh coriander leaves, chopped


For coating and frying:


➤Breadcrumbs

➤1-2 eggs (for the egg wash) or chickpea flour (besan) mixed with water for a vegan option

➤Oil for deep frying


Instructions:


1. Prepare the vegetable filling:

➤In a pan, heat 2 tablespoons of cooking oil over medium heat.

➤Add cumin seeds and let them splutter.

➤Add finely chopped onions and sauté until they become translucent.

➤Add grated ginger, minced garlic, and chopped green chilies. Sauté for another minute until they            release their aroma.

➤Add the boiled and mashed potatoes, followed by the boiled green peas, carrots, beans, and corn (if         using).

➤Stir well to combine all the vegetables.

➤Add garam masala, red chili powder, turmeric powder, and salt. Mix thoroughly and cook for a few         minutes until the spices are well incorporated.

➤Add chopped fresh coriander leaves and mix. Remove the mixture from heat and let it cool.


2. Shape the chops:

➤Take small portions of the vegetable mixture and shape them into round or oval patties, about the             size   of your palm.


3. Coat the chops:

➤Dip each chop in the egg wash (or chickpea flour and water mixture for a vegan option) and then             coat   it with breadcrumbs. Press the breadcrumbs gently onto the chop to ensure they adhere well.


4. Heat oil for frying:

➤Heat oil in a deep pan or kadai over medium heat. The oil should be hot but not smoking.


5. Fry the chops:

➤Carefully slide the chops into the hot oil, a few at a time. Fry until they turn golden brown and crispy       on both sides, which will take about 3-4 minutes per side.


6. Drain and serve:

➤Remove the fried veg chops from the oil and place them on paper towels to drain any excess oil.


7. Serve:

➤Serve the veg chops hot with ketchup or chutney.
