Ingredients:
For the Veg Handi:
➤2 cups mixed vegetables (e.g., carrots, peas, potatoes, beans, cauliflower, bell peppers, etc.)
➤2 tablespoons oil or ghee (clarified butter)
➤1 teaspoon cumin seeds
➤1 large onion, finely chopped
➤2 tomatoes, chopped
➤1-inch piece of ginger, grated
➤4-5 garlic cloves, minced
➤2 green chilies, slit (adjust to your spice preference)
➤1/2 cup yogurt (curd)
➤1/2 teaspoon turmeric powder
➤1 teaspoon red chili powder (adjust to your spice preference)
➤1 teaspoon coriander powder
➤1/2 teaspoon garam masala
➤Salt to taste
➤1/2 cup cream
➤Fresh coriander leaves, chopped, for garnish
For the Handi Masala Paste:
➤1/2 cup grated coconut
➤10-12 cashew nuts
➤1 tablespoon poppy seeds (khus khus)
➤1 teaspoon fennel seeds (saunf)
➤1 teaspoon melon seeds (magaz)
➤1/2 cup water (for blending)
Instructions:
For the Handi Masala Paste:
1. In a blender, combine grated coconut, cashew nuts, poppy seeds, fennel seeds, and melon seeds.
2. Add 1/2 cup of water and blend to a smooth paste. Set aside.
For the Veg Handi:
1. Heat oil or ghee in a large pan or handi over medium heat. Add cumin seeds and let them splutter.
2. Add finely chopped onions and sauté until they become soft and translucent.
3. Add grated ginger, minced garlic, and green chilies. Sauté for a few minutes until the raw aroma disappears.
4. Stir in the chopped tomatoes and cook until they turn soft and the oil starts to separate from the mixture.
5. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for a few minutes.
6. Add the mixed vegetables to the pan and stir to coat them with the spice mixture.
7. Pour in yogurt (curd) and mix well. Cook for a few more minutes until the vegetables are partially cooked.
8. Add the Handi Masala Paste and mix thoroughly.
9. Pour in the cream and let the curry simmer for a few more minutes, allowing the flavors to meld and the vegetables to become tender.
10. Garnish with fresh coriander leaves.
11. Serve Veg Handi hot with naan, roti, or rice.
