Ingredients:


For the Kolhapuri Masala Paste:

➤1/2 cup grated coconut

➤2 tablespoons sesame seeds

➤2 tablespoons poppy seeds (khus khus)

➤1 tablespoon coriander seeds

➤1 tablespoon cumin seeds

➤1-inch piece of cinnamon

➤4-5 cloves

➤4-5 black peppercorns

➤2-3 dried red chilies (adjust to your spice preference)

➤1/2 teaspoon turmeric powder

➤1/4 cup water (for blending)


For the Veg Kolhapuri:

➤2 cups mixed vegetables (e.g., carrots, peas, potatoes, beans, cauliflower, etc.)

➤2 tablespoons oil

➤1 teaspoon cumin seeds

➤1 large onion, finely chopped

➤1-inch piece of ginger, grated

➤4-5 garlic cloves, minced

➤2 green chilies, slit (adjust to your spice preference)

➤2 tomatoes, chopped

➤1/2 cup tomato puree

➤1/2 teaspoon red chili powder (adjust to your spice preference)

➤Salt to taste

➤1/2 cup water

➤1/2 cup fresh cream

➤Fresh coriander leaves, chopped, for garnish




Instructions:


For the Kolhapuri Masala Paste:

1. Dry roast the sesame seeds, poppy seeds, coriander seeds, cumin seeds, cinnamon, cloves, black            peppercorns, and dried red chilies in a pan until they become fragrant. Be careful not to burn them.


2. Allow the roasted spices to cool, then transfer them to a blender. Add grated coconut, turmeric               powder, and 1/4 cup of water.


3. Blend the mixture into a smooth paste and set it aside.


For the Veg Kolhapuri:

1. Heat oil in a large pan or skillet over medium heat. Add cumin seeds and let them splutter.


2. Add finely chopped onions and sauté until they become soft and translucent.


3. Add grated ginger, minced garlic, and green chilies. Sauté for a few minutes until the raw aroma            disappears.


4. Stir in the chopped tomatoes and cook until they turn soft and the oil starts to separate from the               mixture.


5. Add the tomato puree, red chili powder, and salt. Mix well and cook for a few minutes.


6. Add the mixed vegetables to the pan and stir to coat them with the tomato mixture.


7. Pour in 1/2 cup of water, cover the pan, and let the vegetables cook until they are tender.


8. Once the vegetables are cooked, add the Kolhapuri Masala Paste and mix thoroughly.


9. Pour in fresh cream and let the curry simmer for a few more minutes to allow the flavors to meld.


10. Garnish with fresh coriander leaves.


11. Serve Veg Kolhapuri hot with naan, roti, or rice.
