➤2 tablespoons oil or ghee
➤1 teaspoon cumin seeds
➤2-3 cloves
➤2-3 green cardamom pods
➤1-inch cinnamon stick
➤1 bay leaf
➤1 large onion, finely chopped
➤1/2 cup yogurt (curd)
➤1/2 teaspoon turmeric powder
➤1 teaspoon red chili powder (adjust to your spice preference)
➤1 teaspoon coriander powder
➤Salt to taste
➤1/4 cup cream or coconut milk

Instructions:
1. Start by making the korma paste. In a blender, combine the grated coconut, cashew nuts, almonds, poppy seeds, ginger, garlic, and green chilies. Add a little water and blend to a smooth paste. Set the paste aside.
2. Steam or boil the mixed vegetables until they are slightly tender. Drain and set them aside.
3. In a large pan or skillet, heat the oil or ghee over medium heat. Add the cumin seeds, cloves, green cardamom, cinnamon stick, and bay leaf. Sauté for a minute or two until the spices become fragrant.
4. Add the finely chopped onions and sauté until they become soft and translucent.
5. Stir in the korma paste and cook for a few minutes until the oil starts to separate from the paste.
6. Add yogurt (curd), turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few more minutes.
7. Add the steamed vegetables and stir to coat them with the korma sauce. Let the vegetables cook for a few more minutes, allowing the flavors to meld.
