Vegetable lollipops are a fun and creative way to enjoy a variety of vegetables. These lollipops are essentially vegetable cutlets or fritters on sticks, resembling lollipops. Here's how to make vegetable lollipops:

Ingredients:


For the Vegetable Fritters:

➤2 cups of mixed vegetables (carrots, green beans, peas, corn, and potatoes), finely chopped and               boiled

➤1/2 cup of breadcrumbs

➤2 tablespoons of all-purpose flour (maida)

➤1/2 teaspoon of red chili powder (adjust to your spice preference)

➤1/2 teaspoon of garam masala

➤1/2 teaspoon of cumin powder

➤Salt to taste

➤Oil for frying


For the Binding and Coating:

➤2-3 tablespoons of cornstarch

➤Water, as needed

➤2-3 tablespoons of breadcrumbs

➤Lollipop sticks or skewers


For the Sauce:

➤1/2 cup of tomato ketchup

➤2 tablespoons of soy sauce

➤1 tablespoon of chili sauce (adjust to your spice preference)

➤1 tablespoon of vinegar

➤1 tablespoon of sugar

➤1/2 teaspoon of garlic, minced

➤1/2 teaspoon of ginger, minced

➤1/2 cup of water

➤1 tablespoon of oil

➤Salt and pepper to taste

➤Chopped spring onions for garnish



Instructions:


For the Vegetable Fritters:

1. In a mixing bowl, combine the finely chopped and boiled vegetables, breadcrumbs, all-purpose              flour,  red chili powder, garam masala, cumin powder, and salt.


2. Mix well until all the ingredients are combined and you have a cohesive mixture.


3. Take small portions of the mixture and shape them into round or oval shapes, resembling lollipops.


4. Heat oil in a deep frying pan over medium-high heat.


5. In a separate bowl, make a thick paste by mixing cornstarch with water.


6. Dip each vegetable fritter in the cornstarch paste and roll it in breadcrumbs.


7. Carefully insert a lollipop stick or skewer into each fritter, making sure they stay together.


8. Deep fry the vegetable lollipops in the hot oil until they turn golden brown and crispy. Remove them      with a slotted spoon and drain on paper towels.



For the Sauce:

1. In a separate pan, heat 1 tablespoon of oil over medium heat.


2. Add minced garlic and ginger. Sauté for a minute until they become fragrant.


3. Add tomato ketchup, soy sauce, chili sauce, vinegar, sugar, salt, and pepper. Mix well.


4. Add 1/2 cup of water and bring the sauce to a simmer. Cook for a few minutes until it thickens               slightly.



Assembling:

1. Just before serving, dip each vegetable lollipop into the prepared sauce to coat it evenly.


2. Garnish with chopped spring onions.


3. Serve vegetable lollipops hot with extra sauce on the side.


Vegetable lollipops make for a fun and delicious snack or appetizer, and they are a hit with kids and adults alike.
