Ingredients:


➤2 cups potatoes, peeled and cubed

➤2 cups carrots, peeled and sliced

➤1 cup green peas (fresh or frozen)

➤1 large onion, finely chopped

➤2 tomatoes, chopped

➤2-3 green chilies, chopped (adjust according to your spice preference)

➤1 teaspoon ginger-garlic paste

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon mustard seeds

➤1/4 teaspoon asafoetida (hing)

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder (adjust to taste)

➤1 teaspoon coriander powder

➤1/2 teaspoon garam masala

➤Salt to taste

➤2 tablespoons oil

➤Fresh coriander leaves for garnish




Instructions:


1. Heat oil in a pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Allow them to          splutter.


2. Add asafoetida (hing) and chopped onions. Sauté until the onions turn golden brown.


3. Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.


4. Add chopped tomatoes and cook until they become soft and the oil starts to separate.


5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple       of minutes.


6. Add the cubed potatoes, sliced carrots, and green peas. Mix everything well to coat the vegetables          with the spices.


7. Cover the pan with a lid and let the vegetables cook on low to medium heat. Stir occasionally to              prevent sticking to the bottom.


8. Cook until the vegetables are tender but not mushy. This usually takes about 15-20 minutes.


9. Once the vegetables are cooked, add garam masala and mix well. Adjust salt and spices according to     your taste.


10. Garnish with fresh coriander leaves and serve hot with roti, paratha, or rice.
