Aloo Kofta recipe

 Ingredients:


For the Koftas:


➤4 medium-sized potatoes, boiled and mashed

➤1/2 cup paneer (cottage cheese), grated

➤2 tablespoons cornflour or besan (gram flour)

➤Salt to taste

➤1/2 teaspoon red chili powder

➤1/2 teaspoon garam masala

➤Oil for deep frying


For the Curry:


➤2 tablespoons oil

➤1 onion, finely chopped

➤1 tablespoon ginger-garlic paste

➤2 tomatoes, pureed

➤1/2 cup cashew nuts, soaked in warm water

➤1 teaspoon cumin seeds

➤1 teaspoon coriander powder

➤1/2 teaspoon turmeric powder

➤1/2 teaspoon red chili powder

➤1/2 teaspoon garam masala

➤Salt to taste

➤1 cup water

➤Fresh coriander leaves for garnish


Instructions:


For the Koftas:

1. In a mixing bowl, combine mashed potatoes, grated paneer, cornflour (or besan), red chili powder,          garam masala, and salt.


2. Mix everything well to form a smooth dough.


3. Divide the mixture into small portions and shape them into round or oval koftas.


4. Heat oil in a pan for deep frying. Once the oil is hot, deep fry the koftas until they turn golden                brown.  Remove and place them on a paper towel to absorb excess oil.


For the Curry:


1. In a blender, make a smooth paste using soaked cashew nuts and tomatoes.


2. Heat oil in a pan, add cumin seeds, and let them splutter.


3. Add finely chopped onions and sauté until they turn golden brown.


4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.


5. Add the cashew-tomato paste and cook for 2-3 minutes.


6. Add coriander powder, turmeric powder, red chili powder, garam masala, and salt. Cook the masala       until the oil starts to separate from it.


7. Add water to achieve the desired consistency for the curry and bring it to a simmer.


8. Gently place the fried koftas into the curry, allowing them to soak up the flavors.


9. Simmer for another 5-7 minutes until the koftas are heated through and the curry thickens.


10. Garnish with fresh coriander leaves.


Serve the Aloo Kofta hot with naan, rice, or any Indian bread of your choice. Enjoy your delicious homemade Aloo Kofta!
