Ingredients:


➤3-4 medium-sized potatoes, peeled and diced

➤2 cups fresh fenugreek leaves (methi), cleaned and chopped

➤1 onion, finely chopped

➤2 tomatoes, chopped

➤2 green chilies, chopped

➤1 teaspoon ginger-garlic paste

➤1/2 teaspoon turmeric powder

➤1 teaspoon cumin seeds

➤1 teaspoon coriander powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤Salt to taste

➤2 tablespoons oil

➤Fresh coriander leaves for garnish



Instructions:


1. Preparation:

➤Clean the fenugreek leaves thoroughly, discard the stems, and chop them finely.

➤Peel and dice the potatoes into small cubes.

➤Chop onions, tomatoes, and green chilies.


2. Cooking:

➤Heat oil in a pan or kadai over medium heat. Add cumin seeds and let them splutter.

➤Add finely chopped onions and sauté until they become golden brown.

➤Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.


3. Adding Spices:

➤Add chopped tomatoes and cook until they become soft and the oil starts to separate.

➤Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3                minutes.


4. Adding Potatoes:

➤Add the diced potatoes to the mixture and mix well, ensuring the potatoes are coated with the spices.


5. Adding Methi (Fenugreek Leaves):

➤Add the chopped fenugreek leaves (methi) and mix everything well. Cook for 10-12 minutes on              medium heat, stirring occasionally until the potatoes are cooked through.


6. Finishing Touch:

➤Garnish with fresh coriander leaves and serve hot.
