Aloo Rasedar is a simple and delicious North Indian dish where potatoes are cooked in a spiced tomato-based gravy. Here's a basic recipe for Aloo Rasedar:

Ingredients:


➤4-5 medium-sized potatoes, peeled and diced

➤2 tablespoons oil or ghee

➤1 teaspoon cumin seeds

➤1 large onion, finely chopped

➤2 tomatoes, finely chopped or pureed

➤1 tablespoon ginger-garlic paste

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder (adjust to taste)

➤1 teaspoon coriander powder

➤1/2 teaspoon cumin powder

➤Salt to taste

➤1/2 teaspoon garam masala

➤Fresh coriander leaves for garnish



Instructions:

1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.


2. Add finely chopped onions and sauté until they turn golden brown.


3. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.


4. Add chopped tomatoes or tomato puree. Cook until the tomatoes are soft and the oil starts to separate      from the masala.


5. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and           cook for a couple of minutes.


6. Add diced potatoes to the masala and stir to coat them with the spices.


7. Add water to achieve the desired consistency for the gravy. Cover the pan with a lid and let it                  simmer  until the potatoes are cooked through. Stir occasionally to prevent sticking.


8. Once the potatoes are tender, add garam masala and mix well.


9. Garnish with fresh coriander leaves.


Serve Aloo Rasedar hot with rice, roti, or paratha. Enjoy this simple and flavorful potato curry!
