➤2 green chilies, chopped

➤1 teaspoon ginger-garlic paste

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder (adjust to taste)

➤1 teaspoon cumin seeds

➤1 teaspoon coriander powder

➤1/2 teaspoon garam masala

➤Salt to taste

➤3 tablespoons oil

➤Fresh coriander leaves for garnish



Instructions:

1. Prepare the Vegetables:

➤Wash and dice the eggplant and potatoes into equal-sized cubes.


2. Tempering:

➤Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.


3. Sauté Aromatics:

➤Add chopped onions and green chilies. Sauté until the onions become translucent.


4. Add Ginger-Garlic Paste:

➤Add ginger-garlic paste and sauté for a minute until the raw smell disappears.


5. Add Tomatoes:

➤Add chopped tomatoes and cook until they become soft and the oil starts to separate.


6. Add Spices:

➤Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.


7. Add Vegetables:

➤Add diced eggplant and potatoes to the spice mixture. Toss everything together until the vegetables         are well coated.


8. Cooking:

➤Cover the pan and cook on low to medium heat. Stir occasionally to prevent sticking. Cook until the      vegetables are tender.


9. Garnish and Serve:

➤Once the vegetables are cooked, garnish with fresh coriander leaves.


10. Serve Hot:
