➤2 tablespoons ghee (clarified butter)

➤1 teaspoon mustard seeds

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon asafoetida (hing)

➤1 teaspoon grated ginger

➤2-3 green chilies, finely chopped

➤1/2 cup chopped onion

➤1/2 teaspoon turmeric powder

➤1 teaspoon coriander powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤Salt to taste

➤1 tablespoon sugar (adjust to taste)

➤Chopped coriander leaves for garnish

➤Lemon wedges for serving



Instructions:

1. Grate Corn:

➤If using fresh corn on the cob, remove the corn kernels and grate them using a grater. If using frozen corn, thaw them.


2. Prepare the Base:

➤Heat ghee in a pan. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida, grated           ginger, and chopped green chilies.


3. Sauté Onions:

➤Add chopped onions and sauté until they turn golden brown.


4. Add Spices:

➤Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.


5. Add Grated Corn:

➤Add the grated corn to the pan and mix. Cook for a few minutes until the corn starts to release its            moisture.


6. Cook with Milk:

➤Pour in the milk and stir continuously to avoid lumps. Cook on medium heat until the mixture                thickens, and the corn is cooked through. This may take around 10-15 minutes.


7. Add Sugar:

➤Add sugar and adjust the sweetness according to your taste. The sugar balances the flavors and adds       a hint of sweetness to the dish.


8. Garnish:

➤Garnish with chopped coriander leaves.


9. Serve:

➤Bhutte ka Kees is ready to be served. Serve it hot with chapati or as a side dish.
