Ingredients:

➤1 cup fresh corn kernels (from 2-3 corn cobs) or frozen corn, thawed

➤1 cup gram flour (besan)

➤1/4 cup rice flour

➤1 small onion, finely chopped

➤1 green chili, finely chopped (adjust to taste)

➤1/2 teaspoon ginger, grated

➤1/2 teaspoon cumin seeds

➤1/4 teaspoon turmeric powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤A pinch of asafoetida (hing)

➤Salt to taste

➤2 tablespoons chopped coriander leaves

➤Water, as needed

➤Oil for deep frying



Instructions:

1. Prepare Corn:

➤If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw it.


2. Make Batter:

➤In a large mixing bowl, combine gram flour, rice flour, chopped onions, green chili, grated ginger,          cumin seeds, turmeric powder, red chili powder, asafoetida, salt, and chopped coriander leaves.


3. Add Corn:

➤Add the fresh corn kernels to the batter. Mix well to coat the corn with the flour mixture.


4. Adjust Consistency:

➤Add water gradually to form a thick batter. The consistency should be such that it coats the corn              kernels well.


5. Heat Oil:

➤Heat oil in a deep pan or kadhai for frying. Make sure the oil is hot but not smoking.


6. Fry Pakoras:

➤Drop spoonfuls of the corn batter into the hot oil. Fry until the pakoras are golden brown and crispy.      Fry in batches, if necessary.


7. Drain Excess Oil:

➤Use a slotted spoon to remove the fried corn pakoras from the oil. Place them on a plate lined with           paper towels to drain excess oil.


8. Serve:

➤Serve the corn pakoras hot with mint chutney or your favorite sauce.
