Ingredients:


➤1 cup basmati rice, washed and soaked for 30 minutes

➤1 cup fresh or frozen corn kernels

➤1 large onion, thinly sliced

➤1 medium-sized tomato, chopped

➤1/2 cup green peas (optional)

➤2-3 green chilies, finely chopped

➤1 inch ginger, grated

➤3-4 cloves garlic, minced

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon turmeric powder

➤1 teaspoon garam masala

➤1 teaspoon coriander powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤2 tablespoons ghee or oil

➤2 cups water

➤Salt to taste

➤Fresh coriander leaves for garnish (optional)



Instructions:


1. Prepare Ingredients:

➤Wash and soak the basmati rice in water for 30 minutes. Drain the water and set aside.

➤If you're using frozen corn, thaw it. If using fresh corn, you can blanch it for a few minutes.


2. Sauté Aromatics:

➤Heat ghee or oil in a large pan or pot over medium heat. Add cumin seeds and let them splutter.

➤Add sliced onions and sauté until they become golden brown.


3. Add Ginger-Garlic Paste and Green Chilies:

➤Add grated ginger and minced garlic. Sauté for a minute until the raw smell disappears.

➤Add chopped green chilies and sauté for another 30 seconds.


4. Add Tomatoes and Spices:

➤Add chopped tomatoes and cook until they become soft and the oil starts to separate.

➤Add turmeric powder, garam masala, coriander powder, and red chili powder. Mix well and cook for      2-3 minutes.


5. Add Corn and Rice:

➤Add the corn kernels and soaked, drained basmati rice to the pan. Stir gently to coat the rice with the      spices.


6. Add Water and Peas:

➤Pour in 2 cups of water. Add green peas if you're using them. Season with salt to taste. Stir well.


7. Cook the Pulao:

➤Bring the mixture to a boil. Once it starts boiling, reduce the heat to low, cover the pan with a tight-       fitting lid, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.


8. Fluff and Garnish:

➤Once the rice is cooked, fluff it gently with a fork. Cover and let it sit for a few minutes.

➤Garnish with fresh coriander leaves if desired.


9. Serve:

➤Serve the corn pulao hot with raita or a side of your choice.
