Ingredients:

➤4 medium-sized potatoes, peeled and cubed

➤1 cup plain yogurt (curd/dahi)

➤1 large onion, finely chopped

➤2 tomatoes, finely chopped

➤2 green chilies, finely chopped

➤1 teaspoon ginger-garlic paste

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder (adjust to taste)

➤1 teaspoon coriander powder

➤1/2 teaspoon garam masala

➤Salt to taste

➤2 tablespoons cooking oil

➤Fresh coriander leaves for garnish



Instructions:

1. Boil the Potatoes:

➤Boil the cubed potatoes until they are just tender. You can do this on the stovetop or in a pressure             cooker. Drain and set aside.


2. Prepare the Yogurt Mixture:

➤Whisk the yogurt in a bowl until smooth.

➤Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well to form a            smooth paste. Set aside.


3. Cook the Potatoes:

➤Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

➤Add chopped onions and green chilies. Sauté until the onions turn golden brown.


4. Add Tomatoes and Spices:

➤Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

➤Add chopped tomatoes and cook until they become soft and the oil starts to separate.


5. Add Yogurt Mixture:

➤Reduce the heat to low and add the yogurt-spice mixture. Stir continuously to avoid curdling. Cook        for 2-3 minutes.


6. Add Potatoes:

➤Add the boiled potatoes to the yogurt mixture. Mix well until the potatoes are coated with the gravy.


7. Simmer:

➤Add salt to taste and simmer the curry for 8-10 minutes on low heat, allowing the flavors to meld            and  the potatoes to absorb the gravy.


8. Garnish and Serve:

➤Garnish with fresh coriander leaves.

➤Serve Dahi Aloo hot with chapati, naan, or rice.

➤Adjust the spice levels according to your preference.

➤You can add a pinch of sugar to balance the flavors.

➤For a richer taste, you can add a tablespoon of cream or cashew paste.
