Ingredients:


➤3-4 medium-sized potatoes, peeled and cubed

➤3 medium-sized tomatoes, finely chopped

➤1 green chili, finely chopped

➤1 teaspoon ginger, grated

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon mustard seeds

➤1/4 teaspoon asafoetida (hing)

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder (adjust to taste)

➤1 teaspoon coriander powder

➤1/2 teaspoon cumin powder

➤1/2 teaspoon garam masala

➤Salt to taste

➤2 tablespoons oil

➤Fresh coriander leaves for garnish



Instructions:


1. Heat oil in a pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Allow them to          splutter.


2. Add asafoetida (hing), grated ginger, and chopped green chili. Sauté for a minute.


3. Add chopped tomatoes and cook until they become soft and the oil starts to separate.


4. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and           cook for a couple of minutes until the spices are well combined.


5. Add the cubed potatoes and mix them with the spices.


6. Cover the pan with a lid and let the potatoes cook on low to medium heat. Stir occasionally to ensure      even cooking.


7. Once the potatoes are partially cooked, add a little water if needed and continue cooking until the           potatoes are soft and well-cooked.


8. Add garam masala and mix well. Adjust salt and spices according to your taste.


9. Garnish with fresh coriander leaves.


10. Serve the Aloo Tamatar Ki Sabji hot with chapati or puri.
