Ingredients:

➤1 cup corn kernels (fresh or frozen)

➤1/2 cup yellow moong dal (split yellow lentils), washed and soaked for 30 minutes (optional)

➤1 large onion, finely chopped

➤1 large tomato, chopped

➤1 teaspoon ginger-garlic paste

➤1 green chili, chopped (adjust to taste)

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon turmeric powder

➤1 teaspoon coriander powder

➤1/2 teaspoon garam masala

➤1/2 teaspoon red chili powder (adjust to taste)

➤Salt to taste

➤1 tablespoon oil or ghee

➤4 cups water or vegetable broth

➤Fresh coriander leaves for garnish

➤Lemon wedges for serving



Instructions:

1. Prepare Ingredients:

➤If using moong dal, wash and soak it for 30 minutes.


2. Cook Lentils (if using):

➤In a pressure cooker or a saucepan, cook the soaked moong dal with 2 cups of water until soft. If            using a pressure cooker, cook for 2-3 whistles. Set aside.


3. Cook Corn:

➤In a separate pot, boil the corn kernels in 2 cups of water until they are tender. Drain and set aside.


4. Prepare the Base:

➤In a large pot, heat oil or ghee. Add cumin seeds and let them splutter. Add chopped onions and sauté      until they turn golden brown.


5. Add Aromatics:

➤Add ginger-garlic paste and chopped green chili. Sauté for a minute until the raw smell disappears.


6. Add Spices:

➤Add turmeric powder, coriander powder, garam masala, and red chili powder. Mix well.


7. Add Tomatoes:

➤Add chopped tomatoes and cook until they are soft and mushy.


8. Combine Corn and Lentils:

➤Add the boiled corn kernels and cooked moong dal to the pot. Mix everything well.


9. Add Water/Broth:

➤Pour in 4 cups of water or vegetable broth. Bring the mixture to a boil and then simmer for 10-15             minutes.


10. Season and Garnish:

➤Season with salt according to your taste. Garnish with fresh coriander leaves.


11. Serve:

➤Makai ka Shorba is ready to be served. Squeeze a bit of lemon juice on top before serving for a burst     of freshness.
