Ingredients:


➤1 cup corn kernels (fresh, frozen, or canned)

➤2 cups fresh spinach (palak), washed and chopped

➤1 large onion, finely chopped

➤1 large tomato, finely chopped

➤1 green chili, finely chopped (adjust to taste)

➤1 tablespoon ginger-garlic paste

➤1 teaspoon cumin seeds

➤1 teaspoon garam masala

➤1/2 teaspoon turmeric powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤1/2 teaspoon coriander powder

➤Salt to taste

➤2 tablespoons oil or ghee

➤Fresh coriander leaves for garnish (optional)



Instructions:


1. Prepare Spinach:

➤Wash the spinach leaves thoroughly. Blanch them in hot water for 2 minutes. Drain and immediately      transfer to ice water to retain the green color. Once cooled, blend the spinach into a smooth paste.


2. Cook Corn:

➤If using fresh corn, boil or steam it until it's tender. If using frozen or canned corn, ensure they are          thawed or drained.


3. Sauté Onion and Cumin Seeds:

➤Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter. Add finely               chopped onions and sauté until they become translucent.


4. Add Ginger-Garlic Paste:

➤Add ginger-garlic paste and sauté for a minute until the raw smell disappears.


5. Add Tomatoes and Spices:

➤Add finely chopped tomatoes and cook until they become soft and the oil starts to separate. Add              turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.


6. Add Corn and Spinach:

➤Add the cooked corn and the spinach puree to the pan. Mix everything well, ensuring the corn is            coated with the spices and spinach.


7. Simmer:

➤Let the mixture simmer for 5-7 minutes, allowing the flavors to meld. If the mixture is too thick, you      can add a little water to achieve the desired consistency.


8. Season:

➤Season with salt to taste and adjust the spice levels if needed.


9. Garnish and Serve:

➤Garnish with fresh coriander leaves if desired. Serve the palak corn hot with roti, naan, or rice.
