Ingredients:

➤1 cup paneer (cottage cheese), cubed (optional)
➤1 large onion, finely chopped
➤2 tomatoes, finely chopped
➤1 teaspoon ginger-garlic paste
➤1-2 green chilies, chopped (adjust to taste)
➤1/2 teaspoon cumin seeds
➤1/2 teaspoon mustard seeds
➤1/4 teaspoon asafoetida (hing)
➤1/2 teaspoon turmeric powder
➤1 teaspoon red chili powder (adjust to taste)
➤1 teaspoon coriander powder
➤1/2 teaspoon garam masala
➤Salt to taste
➤2 tablespoons oil
➤Fresh coriander leaves for garnish
Instructions:
1. Heat oil in a pan over medium heat. Add cumin seeds, mustard seeds, and asafoetida. Allow them to splutter.
2. Add chopped onions and sauté until they become translucent.
3. Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
4. Add chopped tomatoes and cook until they become soft and the oil starts to separate.
5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
6. Add the chopped spinach to the pan. Stir and cook until the spinach wilts down and reduces in volume.
7. If using paneer, add the cubed paneer to the pan and mix gently with the spinach.
8. Cook for a few more minutes until the paneer is heated through and the spinach is well-cooked.
9. Sprinkle garam masala over the mixture and stir.
10. Garnish with fresh coriander leaves.
