 Appam, also known as rice and coconut hoppers, is a popular South Indian and Sri Lankan dish. It is a type of pancake made with fermented rice batter and coconut milk. Here's a simple recipe for making Appam:

Ingredients:

➤2 cups raw rice

➤1/2 cup cooked rice

➤1 cup fresh coconut, grated

➤1/4 cup cooked rice

➤1/2 teaspoon active dry yeast or 1/4 teaspoon baking soda

➤1 teaspoon sugar

➤Salt to taste

➤Coconut oil for greasing the pan



Instructions:

Preparing the Batter:

1. Soak the Rice:

➤Wash the raw rice thoroughly and soak it in water for about 4-6 hours. Drain the water.


2. Grind the Batter:

➤In a blender, combine the soaked raw rice, cooked rice, grated coconut, and enough water to make a      smooth batter. The consistency should be similar to pancake batter.


3. Fermentation:

➤Transfer the batter to a large bowl. Add salt and sugar. If using active dry yeast, dissolve it in a little        warm water and add it to the batter. Mix well.

➤Allow the batter to ferment overnight or for at least 8 hours. It should double in volume.



Making Appam:

1. Check the Consistency:

➤The fermented batter should be of pouring consistency. If it's too thick, add a little water to adjust.


2. Add Baking Soda (if not using yeast):

➤If you're not using yeast, mix baking soda with a little water and add it to the batter just before                 making the appams.


3. Heat the Appam Pan:

➤Heat an appam pan or a non-stick skillet. If using an appam pan, grease it lightly with coconut oil.


4. Pour the Batter:

➤Pour a ladleful of batter into the center of the pan, and immediately lift and rotate the pan to spread        the batter thinly around the edges, leaving a thicker center.


5. Cover and Cook:

➤Cover the pan and cook the appam on low heat until the edges turn golden brown, and the center is         soft and spongy. There's no need to flip the appam.


6. Serve:

➤Repeat the process with the remaining batter. Serve the appams hot with coconut milk, stew, or any        desired side dish.
