➤1 cup thin poha (flattened rice)
➤1 cup rice flour
➤2 tablespoons urad dal flour (black gram flour)
➤1/2 cup yogurt
➤1/2 teaspoon cumin seeds
➤1/4 cup finely chopped onions
➤1/4 cup finely chopped coriander leaves
➤1-2 green chilies, finely chopped
➤A pinch of asafoetida (hing)
➤Salt to taste
➤Water (as needed)
➤Ghee or oil for cooking
Instructions:
1. Prepare Poha:
➤Rinse the thin poha under running water and let it soak for about 10-15 minutes. Once soaked, drain any excess water.
2. Make Batter:
➤In a mixing bowl, combine the soaked poha, rice flour, urad dal flour, yogurt, cumin seeds, chopped onions, coriander leaves, green chilies, asafoetida, and salt.
3. Mix Well:
➤Add water gradually to make a smooth batter with a pouring consistency. Ensure there are no lumps in the batter.
4. Rest the Batter:
➤Let the batter rest for about 15-20 minutes. This allows the flours to absorb the moisture and gives a better texture to the dosas.
5. Heat the Griddle:
➤Heat a non-stick griddle or dosa tawa over medium heat. Grease it with a little ghee or oil.
6. Pour and Spread:
➤Pour a ladleful of batter onto the hot griddle and spread it in a circular motion to form a thin dosa. You can make it as thin or thick as you prefer.
7. Cook Both Sides:
➤Drizzle a little ghee or oil around the edges. Cook until the bottom turns golden brown. Flip and cook the other side until it's cooked through.
