Ingredients:


➤1 cup fine semolina (rava or suji)

➤1/2 cup rice flour

➤1/4 cup all-purpose flour (maida)

➤1/2 cup yogurt (curd)

➤2 cups water

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon black pepper, coarsely ground

➤1/2 inch piece of ginger, grated

➤1-2 green chilies, finely chopped (adjust to taste)

➤A handful of fresh coriander leaves, chopped

➤1 medium-sized onion, finely chopped

➤Salt to taste

➤Oil or ghee for cooking



Instructions:


1. Prepare Batter:

➤In a large mixing bowl, combine semolina, rice flour, all-purpose flour, and yogurt. Mix well.


2. Add Water:

➤Gradually add water while stirring to make a smooth, lump-free batter. The consistency should be          thin, similar to buttermilk.


3. Add Spices:

➤Add cumin seeds, coarsely ground black pepper, grated ginger, chopped green chilies, chopped              coriander leaves, and salt to the batter. Mix thoroughly.


4. Rest the Batter:

➤Allow the batter to rest for at least 30 minutes. This resting period helps the semolina absorb the            liquid and gives a better texture to the dosa.


5. Prepare Toppings:

➤Chop the onions finely.


6. Make Rava Dosa:

➤Heat a non-stick skillet or a dosa tawa over medium heat. Sprinkle a few drops of water to check if        the pan is hot. If the water sizzles and evaporates quickly, the pan is ready.


➤Stir the batter well and pour a ladleful of batter onto the hot pan. Using a circular motion, spread the      batter to form a thin and lacy dosa.


➤Drizzle a little oil or ghee around the edges of the dosa. Place a few chopped onions on the dosa.


➤Cook until the edges become crispy and golden brown. There's no need to flip the dosa as it's cooked      only on one side.


7. Serve:

➤Fold the dosa in half and serve hot with coconut chutney or sambar.
