Rava Uttapam, also known as Suji Uttapam, is a quick and easy South Indian breakfast dish made with semolina (rava or suji). It's a variation of the traditional Uttapam and requires no fermentation. Here's a simple recipe for making Rava Uttapam:
How to prepare.
Rava Uttapam | Suji Uttapam
Ingredients:
➤1 cup semolina (rava or suji)
➤1/2 cup yogurt
➤1/2 cup finely chopped onions
➤1/4 cup finely chopped tomatoes
➤1/4 cup finely chopped bell peppers (capsicum)
➤1-2 green chilies, finely chopped
➤1/2 inch ginger, grated
➤1/4 cup chopped coriander leaves
➤Salt to taste
➤1/2 teaspoon baking soda
➤Water (as needed)
➤Ghee or oil for cooking
Instructions:
1. Prepare the Batter:
➤In a mixing bowl, combine semolina and yogurt. Mix well and let it rest for about 15-20 minutes. This allows the semolina to absorb the yogurt and soften.
2. Add Vegetables and Spices:
➤Add chopped onions, tomatoes, bell peppers, green chilies, grated ginger, chopped coriander leaves, and salt to the soaked semolina. Mix well.
3. Adjust Consistency:
➤Add water as needed to achieve a thick yet pourable batter consistency. The batter should not be too runny.
4. Add Baking Soda:
➤Just before making uttapams, add baking soda to the batter and mix gently. This will make the uttapams fluffy.
5. Heat the Griddle:
➤Heat a non-stick griddle or tawa over medium heat. Grease it with a little ghee or oil.
6. Pour and Cook:
➤Pour a ladleful of batter onto the hot griddle and spread it in a circular motion to form a small round uttapam. It should be thicker than a regular dosa.
7. Cook Both Sides:
➤Drizzle a little ghee or oil around the edges. Cook until the bottom turns golden brown. Flip and cook the other side until it's cooked through.
8. Repeat:
➤Repeat the process with the remaining batter. You can make multiple uttapams simultaneously depending on the size of your griddle.
9. Serve:
➤Serve the Rava Uttapam hot with coconut chutney, tomato chutney, or any chutney of your choice.
Enjoy your quick and delicious Rava Uttapam for breakfast or as a light snack!
