➤1 tsp mustard seeds

➤1 tsp cumin seeds

➤A pinch of asafoetida (hing)

➤1 sprig of curry leaves

➤1/2 tsp turmeric powder

➤Salt to taste

➤2 tbsp oil

For Dosa:

1. Ghee or oil for cooking dosa

2. Red chutney (made with red chili and garlic) for spreading on dosa (optional)

Instructions:

1. Prepare Dosa Batter:

➤Rinse rice, urad dal, chana dal, and poha in water.

➤Soak them together in enough water for about 4-6 hours.

➤Grind the soaked ingredients into a smooth batter, adding water as needed.

➤Add salt to the batter and let it ferment overnight or for at least 8 hours.

2. Prepare Masala Filling:

➤Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, hing, and curry leaves.

➤Add chopped onions and green chilies. Saute until onions turn golden brown.

➤Add turmeric powder and peas (if using). Cook for a few minutes.

➤Add mashed potatoes and salt. Mix well and cook for 5-7 minutes on medium heat. Set aside.

3. Make Dosa:

➤Heat a dosa tawa or non-stick pan.

➤Pour a ladle full of batter in the center and spread it in a circular motion to make a thin dosa.

➤Drizzle ghee or oil on the edges and cook until the dosa becomes crisp and golden brown.

➤Optionally, spread red chutney on the dosa for extra flavor.

4. Assemble Masala Dosa:

➤Place a generous portion of the prepared masala in the center of the dosa.

➤Fold the dosa over the masala, creating a semi-circle or a roll.

5. Serve:

➤Serve the masala dosa hot with coconut chutney and sambar.
