Ingredients:
➤250 grams bhindi (okra/ladyfinger), washed, dried, and chopped into pieces
➤1 large onion, thinly sliced
➤2 tomatoes, chopped
➤1 teaspoon ginger-garlic paste
➤1/2 teaspoon turmeric powder
➤1 teaspoon red chili powder (adjust to taste)
➤1 teaspoon coriander powder
➤1/2 teaspoon cumin powder
➤1/2 teaspoon garam masala
➤Salt to taste
➤2 tablespoons oil (vegetable or mustard oil works well)
➤Fresh coriander leaves for garnish
Instructions:
1. Preparation:
➤Wash the bhindi and pat it dry completely using a kitchen towel. Trim the ends and chop it into pieces.
2. Sauté Bhindi:
➤Heat oil in a pan over medium heat.
➤Add the chopped bhindi and sauté on medium heat until they are cooked and slightly crispy. Stir occasionally to prevent sticking. This may take about 10-12 minutes.
3. Remove Bhindi:
➤Once the bhindi is cooked, remove it from the pan and set it aside.
4. Prepare Masala:
➤In the same pan, add a little more oil if needed.
➤Add sliced onions and sauté until they become translucent.
➤Add ginger-garlic paste and cook for a minute until the raw smell disappears.
➤Add chopped tomatoes and cook until they become soft and the oil starts to separate.
5. Add Spices:
➤Lower the heat and add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
6. Combine Bhindi:
➤Once the masala is cooked and aromatic, add the sautéed bhindi back to the pan.
➤Mix everything well so that the masala coats the bhindi evenly.
7. Cook and Garnish:
➤Cook for an additional 5-7 minutes on low heat, allowing the flavors to meld.
➤Garnish with fresh coriander leaves.
8. Serve:
