Instructions:


1. Rinse the rice: Rinse the rice under cold water until the water runs clear. This helps remove excess          starch.


2. Combine ingredients: In a medium-sized saucepan, combine the rinsed rice, coconut milk, water,             coconut oil, and salt.


3. Bring to a boil: Place the saucepan over medium-high heat and bring the mixture to a boil.


4. Reduce heat: Once it boils, reduce the heat to low, cover the saucepan with a tight-fitting lid, and             simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.


5. Fluff the rice: Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for        an additional 5 minutes. Then, fluff the rice gently with a fork to separate the grains.
