Ingredients:
➤1 cup grated coconut (fresh or desiccated)
➤2-3 dried red chilies (adjust according to spice preference)
➤1 small onion, roughly chopped
➤2 cloves garlic
➤1 small piece of tamarind (about a small marble-sized ball)
➤1 tablespoon roasted gram (optional, also known as dalia or pottukadalai)
➤Salt to taste
➤Water, as needed
For Tempering:
➤1 tablespoon oil (preferably coconut oil)
➤1/2 teaspoon mustard seeds
➤1/2 teaspoon urad dal (split black gram)
➤1-2 dried red chilies, broken into pieces
➤A few curry leaves
Instructions:
1. Prepare the Ingredients:
➤If you're using fresh coconut, grate it and set aside. If using desiccated coconut, rehydrate it by soaking it in warm water for a few minutes.
➤Soak the tamarind in a little water to soften it.
2. Blend the Chutney:
➤In a blender or mixer, add the grated coconut, dried red chilies, chopped onion, garlic, tamarind, and roasted gram.
➤Add salt to taste.
➤Add a little water to help with blending.
➤Blend until you get a smooth or slightly coarse paste, depending on your preference. Adjust the consistency by adding more or less water.
3. Tempering:
➤Heat coconut oil in a small pan.
➤Add mustard seeds and let them splutter.
➤Add urad dal and sauté until it turns golden brown.
➤Add dried red chilies and curry leaves. Fry for a few seconds until the chilies are crisp.
➤Pour this tempering over the blended chutney and mix well.
4. Serve:
➤Transfer the red coconut chutney to a serving bowl.
➤Serve it as a side with dosa, idli, vada, or any other South Indian snacks.
