Ingredients:


➤1 cup mixed vegetables (carrots, potatoes, beans, peas), chopped

➤1 large onion, thinly sliced

➤1/2 cup cauliflower florets

➤1/2 cup green beans, chopped

➤1/2 cup green peas

➤1 large potato, diced

➤1-inch ginger, grated

➤4-5 cloves garlic, minced

➤2 green chilies, slit

➤1 cup thin coconut milk

➤1 cup thick coconut milk

➤1/2 teaspoon turmeric powder

➤1 teaspoon curry powder (optional)

➤2-3 green cardamom pods

➤2-3 cloves

➤1-inch cinnamon stick

➤1-2 tablespoons coconut oil

➤Salt to taste

➤Fresh coriander leaves for garnish



Instructions:


1. Prepare Vegetables:

➤Wash, peel, and chop the vegetables of your choice.


2. Sauté Aromatics:

➤Heat coconut oil in a pan over medium heat.

➤Add cardamom pods, cloves, and cinnamon stick. Sauté for a minute until they release their aroma.

➤Add sliced onions, green chilies, grated ginger, and minced garlic. Sauté until onions turn                        translucent.


3. Add Vegetables:

➤Add the chopped vegetables (carrots, potatoes, beans, peas, cauliflower) to the pan.

➤Stir well and sauté for 3-4 minutes.


4. Spices:

➤Add turmeric powder and curry powder (if using). Mix well.


5. Coconut Milk:

➤Pour in the thin coconut milk and bring the mixture to a gentle simmer.

➤Cook the vegetables until they are almost tender.


6. Thick Coconut Milk:

➤Add the thick coconut milk to the pan.

➤Stir gently and let it simmer for another 5-7 minutes until the vegetables are completely cooked and        the flavors are well combined.

➤Adjust the salt according to your taste.


7. Tempering (Optional):

➤In a separate small pan, heat a little coconut oil.

➤Add mustard seeds and curry leaves. Once they splutter, pour this tempering over the stew.


8. Garnish and Serve:

➤Garnish the vegetable stew with fresh coriander leaves.

➤Serve hot with appam, idiyappam, rice, or bread.
