Aval Payasam, also known as Poha Kheer, is a delicious South Indian dessert made with flattened rice (poha), milk, sugar, and flavored with cardamom and nuts. Here's a simple recipe to make Aval Payasam at home:

Ingredients:


➤1/2 cup thick flattened rice (poha or aval)

➤4 cups milk

➤1/2 cup sugar (adjust to taste)

➤1/4 teaspoon cardamom powder

➤2 tablespoons chopped nuts (cashews, almonds, pistachios)

➤1 tablespoon raisins

➤A pinch of saffron strands (optional)

➤1 tablespoon ghee (clarified butter)



Instructions:


1. Rinse the flattened rice (poha) under cold water for a few seconds. Drain the water completely and         set aside.


2. In a heavy-bottomed pan or saucepan, heat ghee over medium heat. Once the ghee is hot, add                  chopped nuts and raisins to the pan.


3. Fry the nuts and raisins until the nuts turn golden brown and the raisins plump up. Stir continuously         to prevent burning.


4. Add the rinsed flattened rice (poha) to the pan. Roast the flattened rice in ghee for 2-3 minutes until        it  turns slightly golden and aromatic. Keep stirring to ensure even roasting.


5. Pour milk into the pan with roasted flattened rice. Stir well to combine.


6. Bring the milk to a gentle boil over medium heat, stirring occasionally to prevent sticking.


7. Reduce the heat to low and let the Aval Payasam simmer, stirring occasionally, until the flattened             rice  is cooked and the mixture thickens. This should take about 15-20 minutes.


8. Add sugar to the payasam and stir until it dissolves completely. Adjust the sweetness according to          your taste preferences.


9. Add cardamom powder and saffron strands (if using) to the payasam for added flavor and aroma.            Mix well.


10. Once the Aval Payasam reaches the desired consistency and the flavors are well-incorporated, turn          off the heat.


11. Allow the payasam to cool down for a few minutes before serving.


12. Serve Aval Payasam warm or chilled, garnished with additional chopped nuts and saffron strands if        desired.
