Gulgule Recipe | Pua Recipe
Ingredients:
➤1 cup whole wheat flour (atta)
➤1/4 cup powdered jaggery (gur) or sugar
➤1 ripe banana, mashed
➤1/2 teaspoon fennel seeds (saunf)
➤1/4 teaspoon cardamom powder
➤A pinch of salt
➤Oil for frying
➤Water as needed
Instructions:
1. Prepare the Batter:
➤In a mixing bowl, combine the whole wheat flour, powdered jaggery or sugar, mashed banana, fennel seeds, cardamom powder, and a pinch of salt.
➤Gradually add water to the mixture and whisk until you get a smooth batter consistency. It should be thick enough to coat the back of a spoon.
2. Let it Rest:
➤Allow the batter to rest for about 15-20 minutes. This helps the flavors to meld together and gives a better texture to the gulgule.
3. Heat Oil:
➤Heat oil in a deep frying pan or kadhai on medium heat.
4. Fry the Gulgule:
➤Once the oil is hot, take small portions of the batter using a spoon or your hands and carefully drop them into the hot oil.
➤Fry the gulgule in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy on all sides, stirring occasionally for even cooking.
5. Drain and Serve:
➤Once the gulgule are cooked to a golden brown color, remove them from the oil using a slotted spoon and drain excess oil on paper towels.
6. Serve:
➤Serve the gulgule hot or warm as a snack or dessert. They can be enjoyed on their own or with a cup of chai.

Feel free to adjust the sweetness according to your taste preference by adding more or less jaggery/sugar. Additionally, you can also add grated coconut or chopped nuts to the batter for added flavor and texture if you like.
