 Meethi Seviyan, also known as Sweet Vermicelli or Dry Seviyan, is a popular Indian dessert made from roasted vermicelli cooked in a sweet and flavorful syrup. Here's a simple recipe to make it:

Ingredients:


➤1 cup roasted vermicelli

➤2 tablespoons ghee (clarified butter)

➤1/2 cup sugar (adjust to taste)

➤1 and 1/2 cups water

➤1/4 teaspoon cardamom powder

➤2 tablespoons chopped nuts (almonds, cashews, pistachios, etc.)

➤1 tablespoon raisins

➤A pinch of saffron strands (optional)

➤A few strands of edible silver foil (optional, for garnish)



Instructions:


1. Heat ghee in a pan or kadai (Indian wok) over medium heat. Once the ghee is hot, add the roasted          vermicelli to it.


2. Roast the vermicelli in ghee until it turns golden brown and aromatic. Keep stirring continuously to        ensure even roasting and to prevent burning. This should take about 3-4 minutes.


3. Once the vermicelli is roasted, add chopped nuts and raisins to the pan. Continue to sauté for another       1-2 minutes until the nuts turn golden brown and the raisins plump up.


4. In a separate saucepan, bring water to a boil. Add sugar to the boiling water and stir until the sugar is       completely dissolved, creating a syrup.


5. Pour the sugar syrup into the pan with the roasted vermicelli, nuts, and raisins. Stir well to combine.


6. Add cardamom powder and saffron strands (if using) to the mixture for added flavor and aroma. Mix     everything together.


7. Cover the pan with a lid and let the sweet vermicelli simmer on low heat for about 5-7 minutes, or          until the vermicelli is cooked and the syrup is absorbed. Stir occasionally to prevent sticking.


8. Once the vermicelli is cooked and the syrup thickens, turn off the heat. Allow it to rest for a few               minutes.


9. Garnish the Meethi Seviyan with edible silver foil (if using) for a decorative touch.


10. Serve the Sweet Vermicelli warm or at room temperature as a delightful dessert or snack.
