Mishti Doi is a delightful Bengali sweet yogurt dessert. Here's a simple recipe to make it at home:

Ingredients:


➤1 liter full-fat milk

➤1/2 cup sugar (adjust to taste)

➤1 tablespoon yogurt (as a starter culture)

➤A pinch of cardamom powder (optional)

➤Saffron strands for garnish (optional)



Instructions:


1. Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat. Stir occasionally           to  prevent the milk from sticking to the bottom of the pan.


2. Once the milk comes to a boil, reduce the heat to low and let it simmer. Stir occasionally and let it          simmer until the milk reduces to about half its original volume. This process can take around 30-45        minutes. Keep an eye on it to avoid boiling over.


3. Add sugar to the reduced milk and stir well until the sugar dissolves completely. Let the milk simmer      for another 5-10 minutes, allowing the sugar to blend in.


4. Remove the pan from the heat and let the sweetened milk cool down to lukewarm temperature.


5. In a small bowl, take 1 tablespoon of yogurt and add a couple of tablespoons of the lukewarm                sweetened milk to it. Mix well until the yogurt is smooth and lump-free.


6. Pour the yogurt mixture back into the pan with the remaining sweetened milk. Stir well to combine.


7. If using cardamom powder, add it to the milk and mix well for added flavor.


8. Cover the pan with a lid and wrap it with a clean kitchen towel or place it in a warm place to                  incubate. Let it ferment for about 6-8 hours or until the yogurt sets. During this time, the milk will           thicken and develop a slight tangy flavor.


9. Once the Mishti Doi is set, refrigerate it for a few hours to chill.


10. Before serving, garnish the Mishti Doi with saffron strands for an extra touch of flavor and aroma.


11. Serve chilled and enjoy the creamy, sweet goodness of homemade Mishti Doi!


Note: Mishti Doi can be stored in the refrigerator for a couple of days. Make sure to use a clean and dry spoon when serving to prevent contamination.
