Ingredients:
➤1 cup whole wheat flour (atta)
➤1 cup desi ghee (clarified butter)
➤1 cup powdered sugar
➤1/2 cup chopped almonds and cashews
➤2 tbsp melon seeds (magaz)
➤1/2 cup edible gum (gond)
➤1 tsp cardamom powder
➤A pinch of saffron strands (optional)
➤Desiccated coconut for garnish (optional)
Instructions:
1. Roasting Wheat Flour:
➤Heat 1/2 cup of ghee in a heavy-bottomed pan over low-medium heat.
➤Add the whole wheat flour (atta) to the ghee and roast it on low flame. Keep stirring continuously to avoid burning. Roast until it turns golden brown and you can smell a nutty aroma.
2. Adding Dry Fruits:
➤Add chopped almonds, cashews, melon seeds, and edible gum (gond) to the roasted wheat flour. Continue to roast for another 5-7 minutes until the dry fruits and gum are well incorporated.
3. Adding Sugar:
➤Reduce the heat to low and add powdered sugar to the mixture. Mix well until the sugar is completely melted and combined with the rest of the ingredients.
4. Adding Flavor:
➤Add cardamom powder and saffron strands (if using). Mix thoroughly.
5. Final Touch:
➤Pour the remaining 1/2 cup of ghee into the mixture and stir well. Cook for an additional 2-3 minutes until the ghee is absorbed, and the mixture comes together.
6. Shaping Pinni:
➤Let the mixture cool down slightly. While it is still warm, take small portions and shape them into round balls or cylindrical shapes, making Pinnis.
7. Garnish:
➤Optionally, you can roll the Pinnis in desiccated coconut for added texture and presentation.
8. Cooling:
➤Allow the Pinnis to cool completely before storing them in an airtight container.
Enjoy the rich and delicious Pinnis as a sweet treat during festivals or share them with family and friends. The combination of wheat flour, ghee, and dry fruits gives Pinni its unique taste and texture.
