Ingredients:
➤1 cup thick poha (flattened rice)
➤1 cup semolina (rava or sooji)
➤1 cup yogurt (curd)
➤1/2 cup water (adjust as needed)
➤1/2 cup grated carrot (optional)
➤1/4 cup chopped cilantro (coriander leaves)
➤1/2 teaspoon baking soda
➤Salt to taste
For Tempering:
➤1 tablespoon oil
➤1/2 teaspoon mustard seeds
➤1/2 teaspoon urad dal (black gram)
➤1/2 teaspoon chana dal (split chickpeas)
➤A pinch of asafoetida (hing)
➤Curry leaves
Instructions:
1. Washing Poha:
➤Rinse the poha under running water for a couple of minutes. Drain the water and set aside.
2. Preparing Batter:
➤In a mixing bowl, combine the rinsed poha, semolina, yogurt, water, grated carrot (if using), chopped cilantro, and salt. Mix well and let it rest for about 15-20 minutes to allow the semolina to absorb the moisture.
3. Tempering:
➤In a small pan, heat oil. Add mustard seeds, urad dal, chana dal, asafoetida, and curry leaves. Let the mustard seeds splutter and dals turn golden brown. Add this tempering to the batter and mix well.
4. Adding Baking Soda:
➤Just before making the idlis, add baking soda to the batter and give it a quick mix.
5. Steaming:
➤Grease the idli plates with oil. Pour the batter into each mold.
➤Steam the idlis in a steamer for about 12-15 minutes or until a toothpick inserted into the center comes out clean.
6. Cooling and Demolding:
➤Allow the Poha Idlis to cool for a few minutes before demolding them using a spoon.
7. Serve:
➤Serve Poha Idlis hot with coconut chutney, sambar, or any chutney of your choice.
