Chili Cheese Sweet Potato Casserole
Ingredients:
➤3 large sweet potatoes, peeled and cubed
➤1 tablespoon olive oil
➤1 small onion, finely chopped
➤2 cloves garlic, minced
➤1 can (15 ounces) chili beans, drained and rinsed
➤1 can (10 ounces) diced tomatoes with green chilies, drained
➤1 cup shredded cheddar cheese
➤1 teaspoon chili powder
➤1/2 teaspoon cumin
➤Salt and pepper to taste
➤Chopped fresh cilantro for garnish (optional)
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Place the cubed sweet potatoes in a pot of boiling water and cook until tender, about 10-15 minutes. Drain and set aside.
3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
