Ingredients:


For the black beans:

➤1 can (15 ounces) black beans, drained and rinsed

➤1 tablespoon olive oil

➤1 teaspoon chili powder

➤1/2 teaspoon ground cumin

➤1/2 teaspoon smoked paprika

➤Salt and pepper to taste


For the vegetables:

➤1 bell pepper, sliced

➤1 red onion, sliced

➤1 cup cherry tomatoes, halved

➤1 tablespoon olive oil

➤Salt and pepper to taste


For assembling tacos:

➤8 small corn tortillas

➤1 cup shredded lettuce

➤1 avocado, sliced

➤1/2 cup salsa

➤Lime wedges for serving

➤Optional toppings: chopped cilantro, diced red onion, sliced jalapeños, sour cream or Greek yogurt



Instructions:


1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil        for easy cleanup.


2. In a mixing bowl, combine the drained and rinsed black beans with olive oil, chili powder, cumin,          smoked paprika, salt, and pepper. Toss until the beans are well coated with the seasoning.


3. Spread the seasoned black beans evenly on one half of the prepared baking sheet.


4. In the same mixing bowl (no need to wash), toss the sliced bell pepper, red onion, and cherry                 tomatoes with olive oil, salt, and pepper until coated.


5. Spread the seasoned vegetables evenly on the other half of the baking sheet, making sure they are in      a single layer.


6. Roast the black beans and vegetables in the preheated oven for 15-20 minutes, or until the                      vegetables  are tender and slightly charred, and the black beans are crispy.


7. While the beans and vegetables are roasting, warm the corn tortillas in a skillet or in the microwave         according to package instructions.


8. Once the black beans and vegetables are done, remove the baking sheet from the oven.


9. To assemble the tacos, spoon some black beans and roasted vegetables onto each warm tortilla. Top        with shredded lettuce, sliced avocado, salsa, and any other desired toppings.


10. Serve the crispy sheet-pan black bean tacos with lime wedges on the side for squeezing over the              tacos.
