Ingredients:


➤1 cup dried chickpeas (not canned)

➤1 small onion, roughly chopped

➤4 cloves garlic

➤1/4 cup fresh parsley, chopped

➤1/4 cup fresh cilantro, chopped

➤1 teaspoon ground cumin

➤1 teaspoon ground coriander

➤1/4 teaspoon cayenne pepper (optional, for spice)

➤1 teaspoon salt, or to taste

➤1/2 teaspoon black pepper

➤1/2 teaspoon baking powder

➤4-6 tablespoons all-purpose flour or chickpea flour

➤Vegetable oil, for frying



Instructions:


1. Prepare the Chickpeas: Place the dried chickpeas in a large bowl and cover with cold water. Let           them soak overnight or for at least 8 hours. The chickpeas will double in size. After soaking, drain         the chickpeas well.


2. Blend the Mixture: In a food processor, combine the soaked and drained chickpeas, chopped onion,     garlic cloves, parsley, cilantro, ground cumin, ground coriander, cayenne pepper (if using), salt, black     pepper, and baking powder. Pulse until the mixture is finely ground but not pureed. You may need to     scrape down the sides of the bowl occasionally. The mixture should be coarse and hold together             when  squeezed, but not too wet.


3. Form the Falafel: Transfer the mixture to a bowl. Stir in 4 tablespoons of flour, adding more as               needed until the mixture holds together well when formed into balls. It should still be slightly                 sticky.  Cover the bowl and refrigerate for at least 1 hour, or up to overnight.


4. Shape and Fry the Falafel: Heat vegetable oil in a large skillet or pot over medium heat until it reaches 350°F (180°C). While the oil is heating, form the falafel mixture into small balls, about 1 to 1 1/2 inches in diameter. You can use your hands or a falafel scoop to shape them.


5. Fry the Falafel: Carefully place the formed falafel balls into the hot oil, frying in batches to avoid          overcrowding the pan. Cook for about 3-4 minutes per side, or until golden brown and crispy. Use a        slotted spoon to transfer the cooked falafel to a plate lined with paper towels to drain excess oil.


6.Serve: Serve the falafel warm with pita bread, hummus, tahini sauce, chopped vegetables, and your       favorite toppings.
