Ingredients:
➤2 cups cooked pinto beans (or 1 can, drained and rinsed)
➤2 tablespoons lard, bacon fat, or vegetable oil
➤1 small onion, finely chopped
➤2 cloves garlic, minced
➤1 teaspoon ground cumin
➤1/2 teaspoon chili powder (adjust to taste)
➤Salt to taste
➤Optional toppings: shredded cheese, chopped fresh cilantro, diced tomatoes, sliced jalapeños, sour cream, avocado slices
Instructions:
1. If using canned pinto beans, drain and rinse them under cold water. If using dried beans, cook them according to package instructions until tender.
2. In a large skillet, heat the lard, bacon fat, or vegetable oil over medium heat.
3. Add the finely chopped onion to the skillet and cook until it becomes translucent, about 3-4 minutes.
4. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
5. Add the cooked pinto beans to the skillet along with the ground cumin and chili powder. Stir well to combine.
