Sheet-Pan Harissa Chicken & Sweet Potatoes






Ingredients:


➤ 4 bone-in, skin-on chicken thighs

➤ 2 medium sweet potatoes, peeled and cut into 1-inch cubes

➤ 3 tablespoons harissa paste

➤ 3 tablespoons olive oil

➤ 2 cloves garlic, minced

➤ 1 teaspoon ground cumin

➤ 1 teaspoon smoked paprika

➤ 1 teaspoon salt

➤ ½ teaspoon black pepper

➤ vFresh cilantro or parsley for garnish (optional)




Instructions:


1. Preheat your oven to 400°F (200°C).


2. In a small bowl, mix together the harissa paste, olive oil, minced garlic, ground cumin, smoked              paprika, salt, and black pepper.


3. Place the chicken thighs and sweet potato cubes in a large mixing bowl. Pour the harissa mixture            over them and toss until everything is evenly coated.


4. Arrange the chicken thighs and sweet potatoes on a large sheet pan in a single layer, making sure            they  are not overcrowded.


5. Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the sweet        potatoes are tender, flipping the chicken halfway through cooking.


6. Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh cilantro or             parsley if desired.


7. Serve the Sheet-Pan Harissa Chicken & Sweet Potatoes hot, and enjoy!
