Ingredients:

➤ 2 tablespoons olive oil

➤ 1 large onion, chopped

➤ 3 cloves garlic, minced

➤ 1 bell pepper, diced (any color you prefer)

➤ 2 medium carrots, diced

➤ 1 zucchini, diced

➤ 1 cup corn kernels (fresh, frozen, or canned)

➤ 1 can (15 oz) diced tomatoes

➤ 1 can (15 oz) kidney beans, drained and rinsed

➤ 1 can (15 oz) black beans, drained and rinsed

➤ 1 can (15 oz) pinto beans, drained and rinsed

➤ 1 can (6 oz) tomato paste

➤ 2 cups vegetable broth

➤ 2 teaspoons chili powder

➤ 1 teaspoon cumin

➤ 1 teaspoon paprika

➤ Salt and pepper to taste

➤ Optional toppings: chopped fresh cilantro, sliced green onions, shredded cheese, sour cream, avocado slices, lime wedges



Instructions:

1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5        minutes.


2. Add minced garlic and cook for another minute until fragrant.


3. Stir in diced bell pepper, carrots, and zucchini. Cook for about 5 minutes until the vegetables begin         to  soften.


4. Add corn kernels, diced tomatoes, kidney beans, black beans, pinto beans, and tomato paste to the          pot. Stir well to combine.


5. Pour in vegetable broth and add chili powder, cumin, paprika, salt, and pepper. Stir until all                    ingredients are evenly distributed.


6.Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for about 20-25              minutes, stirring occasionally.


7. Taste the chili and adjust seasoning if needed. If you prefer a thicker consistency, you can let it                simmer uncovered for a few more minutes.


8. Once the chili is ready, serve hot with your favorite toppings such as chopped cilantro, sliced green         onions, shredded cheese, sour cream, avocado slices, or lime wedges.
