➤1/2 cup marinated artichoke hearts, drained and chopped

➤1/4 cup sliced pepperoncini peppers

➤1/4 cup diced red onion

➤1/4 cup chopped fresh parsley

➤1/4 cup diced salami or pepperoni (optional)

➤1/4 cup crumbled feta cheese (optional)

➤2 tablespoons extra virgin olive oil

➤1 tablespoon red wine vinegar

➤1 teaspoon dried oregano

➤Salt and pepper to taste



Instructions:

1. Prepare the chickpeas: Drain and rinse the chickpeas thoroughly under cold water. Pat them dry with paper towels or a clean kitchen towel and transfer them to a large mixing bowl.


2. Add the vegetables and other ingredients: To the bowl with the chickpeas, add the halved cherry tomatoes, sliced black olives, chopped marinated artichoke hearts, sliced pepperoncini peppers, diced red onion, and chopped fresh parsley. If using, add the diced salami or pepperoni and crumbled feta cheese as well.
