Ingredients:

➤1 cup green or brown lentils

➤1 cup rice (preferably long-grain like basmati)

➤3 large onions, thinly sliced

➤4 cups water or vegetable broth

➤3 tablespoons olive oil

➤1 teaspoon cumin

➤1 teaspoon ground coriander

➤Salt and black pepper to taste



Instructions:

1. Rinse Lentils and Rice:

➤Rinse the lentils and rice separately under cold water until the water runs clear. This helps remove          excess starch.


2. Cook Lentils:

➤In a medium-sized saucepan, bring 2 cups of water or vegetable broth to a boil.

➤Add the rinsed lentils to the boiling water, reduce the heat to low, and simmer for about 15-20                minutes, or until the lentils are tender but not mushy. Drain any excess water and set aside.


3. Cook Rice:

➤In another pot, bring 2 cups of water or vegetable broth to a boil.

➤Add the rinsed rice to the boiling water, reduce the heat to low, cover, and simmer for about 15-20          minutes, or until the rice is cooked and fluffy. Remove from heat and let it sit covered for 5 minutes.


4. Caramelize Onions:

➤While the lentils and rice are cooking, heat olive oil in a large skillet over medium heat.

➤Add the thinly sliced onions to the skillet and cook, stirring occasionally, until the onions are                   caramelized and golden brown, about 20-25 minutes. Be patient with this step, as caramelizing the           onions slowly enhances their flavor.


5. Combine Lentils, Rice, and Onions:

➤Once the lentils, rice, and onions are all cooked, combine them in a large mixing bowl.

➤Add the cumin, ground coriander, salt, and black pepper to the bowl, and gently mix until everything     is evenly distributed.


6. Serve:

➤Transfer the Mujaddara to a serving dish.

➤You can garnish with additional caramelized onions or chopped parsley if desired.

➤Mujaddara can be served hot, warm, or at room temperature.


7. Enjoy!

➤Serve Mujaddara as a main dish or as a side dish alongside yogurt, salad, or your favorite Middle             Eastern condiments.
